Spring rolls are eaten during the Lunar New Year as a symbol of wealth and prosperity.
As many of us have been spending more time at home lately, cooking and baking we hope you enjoy making (and eating!) these delicious spring rolls.
Spring rolls are a traditional food consumed during spring. They are a welcome change from the preserved food consumed over a long winter. They are usually eaten during the spring festival in mainland China. There are no definitive rules about what goes inside spring rolls. It can be seafood, meat, vegetarian, or sweet spring rolls! This recipe is for chicken and vegetable spring rolls.

Method
Step 1: Heat wok over high heat. Add oil and stir-fry vegetables and chicken. Add salt and curry powder. Once cooked, transfer mixture to a heat proof bowl. Set aside to cool. Wash and dry wok.
Step 2: Prepare the plain flour slurry (it will be used when you wrap the rolls) by combining flour and boiled water. You only need a small amount.
Step 3: Once everything is ready you can start wrapping the rolls. Place 1 spring roll wrapper on a flat surface with one corner facing you. Covering remaining wrappers with a dry tea towel to prevent them from drying out. Fold the wrap in one third and place the filling in the middle, roll and seal with the slurry.
Step 4: Pour remaining oil into wok. Heat over medium-high heat. Cook spring rolls, in batches for 3 to 4 minutes or until golden. Using a slotted spoon, remove from wok. Drain on paper towel.
Step 5: Enjoy your homemade spring rolls with your favorite dipping sauce.
