As it passes through a raindrop, those colours get split up and appear to our eyes as the beautiful rainbows we see in the sky. Why not grab some vegetables and spices, and make your very own rainbow to brighten up snack time with Scienceworks?”

3 cans of chickpeas
3 cloves garlic, crushed or finely chopped
3 tablespoons tahini
3 tablespoons olive oil
2 tablespoons lemon juice
2 teaspoons salt
Plus some vegetables and spices to bring in the colour!
Red – 10g sun dried tomatoes
Orange – a small red capsicum, roasted until tender
Yellow – ½ teaspoon turmeric powder
Green – 40g fresh baby spinach leaves, 50g artichoke heart
Purple – 80g purple cabbage, roasted
Pink – 1 small beetroot, chopped into cubes and roasted
Step 1: Place all the ingredients for the basic hummus recipe into a food processor or blender and blend until smooth. Add a tablespoon of cold water if too thick.
Step 2: Divide hummus into 6 portions, place 1 portion into blender, add the vegetable or spice for your first colour and blend until smooth. Repeat for each colour. Place each colour in a small bowl.
Step 3: To serve, arrange the bowls of coloured hummus into a semi-circular rainbow shape. Take some carrot, capsicum, cucumber, celery and pita or Turkish bread, cut into strips and lay them out to make another rainbow!
