Cooking

Cook a traditional Italian meal such as pasta with ‘Muddica palermintana’ (seasoned breadcrumbs):

Ingredients

  • 2 cups seasoned breadcrumbs
  • 6 tablespoons olive oil
  • 3 cloves minced garlic
  • 3 tablespoons sugar or to taste
  • 450g cooked spaghetti
  • fresh parsley
  • salt and pepper
  • anchovy fillets minced (optional)

Method

Toast the breadcrumbs in a skillet on low heat with sugar until light brown, keep mixing well about 4 min and remove. Heat oil in a skillet; add anchovies if desired, parsley and minced garlic for 2 min. Season with salt and pepper. Toss with breadcrumbs and serve over pasta.

This recipe is typically served on the Feast of St. Joseph. It's a simple Sicilian dish. Also served on Good Friday; some Sicilians add a little tomato paste to the skillet.
